No Bake, No Dairy, Nut Free Brownies



  • 1 c pitted medjool dates
  • 1 c dry oats (one minute or instant)
  • 1 c graham cracker crumbs
  • 1/4 c raw cocoa powder
  • 2 Tbsp Wowbutter (I find this at our local Walmart market)
  • 2 Tbsp coconut milk 


Fudge Top:

  • 2 ripe bananas
  • 1/2 c raw cocoa powder
  • 4 Tbsp Wowbutter
  • 4 Tbsp raw honey or agave syrup



  1. Mix together all crust ingredients in a food processor until well blended.
  2. Spread bottom ingredients in an 8x8 or 9x9 baking pan until evenly distributed, press down tight
  3. Mix together top ingredients in a food processor until well blended.
  4. Spread top blend over bottom layer base until evenly distributed.
  5. Place in freezer for 30 minutes.
  6. Cut into squares, serve and enjoy!
  7. Re-freeze whatever you don't eat and enjoy at a later date!

Getting Healthy at Camp KO!


There was no time for campfires, lake swim tests and "Kumbaya" at Camp KO this summer.  Instead, this energetic group of ambitious children were focused on healthy minds and healthy bodies.  My small contribution to this unique West Hartford, CT camp offering was a healthy eating cooking demonstration.  The rest of the week, these campers played tennis, basketball, learned about writing and publishing books, creative arts and science.  

I happened to be there on National Vanilla Milkshake Day so it seemed most appropriate to open my demo with vanilla and honey greek yogurt malted milkshakes and a toast to healthy eating and "super foods"!  I demonstrated 3 recipes highlighting the healthy ingredient alternatives and the "superfoods".  We also competed a "superfoods" worksheet to help kids identify and understand all of the healthy options that can be available to them throughout the day.  

The segment ended with some questions and answers and I was thoroughly impressed by the engagement and sophistication of this youngsters when it came to food. A special thanks to health conscious parents and the Food Network for helping to make my job at Camp KO easy!
