Grilled Tuna Steak

  • 4 (1-inch-thick) fresh tuna steaks (about 4 pounds)
  • Olive oil
  • Kosher salt and freshly ground black pepper
To grill the tuna, get your grill very hot. Brush the fish with olive oil, and sprinkle with salt and pepper. Grill each side for 2 to 2 1/2 minutes (rare) or up to 4 to 4/12 minutes (medium well) . My preference will for the center to be raw, like sushi, because I find the tuna to get dry the longer it cooks. Allow to rest for 5 to 10 minutes and serve.
