Caramel Apple Muffins

I am obsessing over these caramel apple muffins!!!  I could not resist all of the beautiful apples in the market today and what better way to get through them then to start baking!!  The entire kitchen smells like Fall.  These muffins are tart, sweet and gooey.  No day in September or October should be started without them.  They remind me of when I was a little girl and my dad would make caramel apples on Halloween night for me and my sisters (and the rest of the neighborhood).  I can see him dipping the apples now!!! 

Ingredients:

 

  • 2 c all-purpose flour
  • 3/4 c sugar
  • 2 t baking powder
  • 2-1/2 t ground cinnamon 
  • 1/2 t salt
  • 1 egg, plus 1 yolk
  • 1 c 2% milk
  • 1/4 c butter, melted
  • 2 t vanilla extract
  • 1/2 chopped peeled tart apple
  • 12 caramels, chopped
Topping:
  • 1/2 c packed brown sugar
  • 1/4 c quick-cooking oats
  • 3 T butter, melted
  • 1 t cinnamon

Directions:  

 

In a large bowl, combine the flour, sugar, baking powder, cinnamon and salt. In another bowl, whisk the egg, milk, butter and vanilla. Stir into dry ingredients just until moistened. Fold in apple and caramels.

Fill paper-lined muffin cups three-fourths full. Combine topping ingredients; place over batter.

Bake at 350° for 20-25 minutes or until a toothpick inserted in the cake portion comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.
