Mary French's Egg Casserole

YUM!  Perfect for a brunch or even a dish to bring to a friend.  This is pretty simple and it requires marinating time so "make ahead" is the name of the game.  We recently had this dish at my cousin Ann's 40th birthday party- an all girls sleepover at the beach.  We spent the whole morning reminiscing- eating Mary French's famous egg casserole, fruit salad and a few mimosas ; )

When my Aunt Betsy made this for us, she had a few variations:  she did NOT remove the crusts, she used a whole package of crumbled Jones' breakfast sausage and an entire package of bacon, diced.  Both the bacon and sausage were cooked and cooled before adding to the casserole.  Additionally, she sprinkled some cheese on top to give it a nice brown crispy crust.
