PB & J Smoothie!

This smoothie has been in my life for over 10 years.  I was introduced to it at the juice bar at Club H in Hoboken.  It is listed as the "Nestor" shake and its either a meal replacement or a post workout drink.  We make it all the time at home, at any time of the day.  While the ingredients may sound strange, you will have to trust me that when blended together it is nothing short of refreshing goodness.

  • 1 banana (I prefer to have it frozen, but you can make this work with a room temperature banana)
  • 1/2 c blueberries (see above, ditto on the temperature)
  • 2 T peanut butter
  • 1/2 c plain or vanilla yogurt
  • 1 c milk (plus any extra amount to achieve your desired consistency)
  • 1/4 c rolled oats (I find that instant Quaker oats work best)
  • 1/2 t sweetner (eg. Equal, Splenda)
  • 1 c ice

Put all ingredients in a blender and mix on high speed.  You may need to add more milk to achieve desired consistency.  Pour in large glass and drink immediately!
